Thanksgiving  Pumpkin Pie

Hi there, I feel like I haven't written a blog post in ages witch might or not might be true hahaha. Today's blog is another baking blog, but this one is kind of special. This weekend just past was Thanksgiving here in Canada and to celebrate I decided to make pumpkin pie. This was the second time I ever baked a pie and to top things off it was pumpkin pie I decided to bake, we all know that was a BIG challenge.
I made the crust and the filling yeah yeah I know I am an over achiever. 

Without further due here is the recepie and some pictures of the final result enjoy. 


Pastry for single crust: 

1 1/3  cups all-purpose flour 
1/2 cup shortening
1/2 teaspoon salt 
3 1/2 tablespoon cold water 

2 mashed, cooked pumpkin 
1 can evaporated milk 
2 eggs, beaten 
3/4 cup packed brown sugar 
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger 
1/2 teaspoon ground nutmeg

How To 
1. Preheat oven to 200 degrees C 

 Single Crust
1. Mix together the flour and salt 
2. Cut shortening into flour 
3. Add cold water 1 tablespoon at a time ( 3 to 5 is the most you will need)
4. Mix dough and repeat until dough is moist enough to hold together 
5. With lightly floured, hands shape dough into a ball 
6. On a lightly floured board roll dough out to about 1/8 inch thickness 
7. With a larger knife , cut dough 1 1/2 inch larger than the upside down pan 
8. Gently roll the dough around the pan and pat down until dough is sticking together to the pan 

Mashed Pumpkin 
1. Use 1 1/2 pounds of skin-on, raw pumpkin to yield 2 cups of mashed. Scoop out the seeds and the guts of the pumpkin
2. Cut pumpkin into chunks. In saucepan over medium heat, in 1 inch of boiling water heat the pumpkin unto boil
3.  Take out when the pumpkin separates from the skin
4. Cook for 30 minutes
5.  Drain and cool with cold water before continue to peal the pumpkin
6. Finally mash the pumpkin just like mashed potatoes

Pumpkin Filling 
1. In a large bowl, beat pumpkin with evaporated milk, eggs, brown sugar, cinnamon, ginger, nutmeg and salt 
2. With electric mixer mix well 
3. Pour into prepared crust 
4. Bake for 40 minutes or until when knife s inserted 1 inch from the edge comes out clean 
Let cool and enjoy with some whip cream!! 

The final result was AMAZING which was a big surprise to me. Both Jess and Dann said that the pie was SO SO good. So I guess I know how to bake pumpkin pie.
